I like your idea about using an auxillary rack for all the reasons you cited. What size is that rack and where can I get one?

Thanks brother, the rack did help to maintain the firmness of the bark on bottom throughout the steaming, and that in itself was worth having it for...plus the handling of the shoulder was so much easier...no fuss, no muss.

You may have missed that thread...it's racks I made for my Vault for double-capacity of my Jerky smokes.
