Basic Fatty Breakfast Burrito

Here is how we make fatty breakfast burritos. This is the basics, you can add whatever you prefer.

Makes 6-8 burritos.

1- 1 lb. fatty of your choice, chopped
1- 4 oz. can diced green chiles
1/2 cup chopped onion, Vidalia in season

Put all ingredients in a skillet and cook over med. heat until onion is translucent.
Scramble 6 eggs and add to the skillet mixture, mix well.

Spoon mixture onto warmed flour tortillas with sour cream, salsa, grated/shredded cheese, jalapeno slices, chopped fresh tomato - whatever you prefer, and roll up.
You could add some hash browned potatos or tater tots.
Or, do the Bud (of Bud & Tonto) thing and spoon everything over a bowl of cheese grits!

Amen....my wife and I ate one or two every morning for breakfast the week after the gathering.

Now my wife is wanting me to be sure and smoke some extra fatties so that we have a couple ready for breakfast burritos at all times.
 
Still have 2 gallon baggies of Gathering burrito leftovers frozen!
They will be thawed and gone this weekend camping with the neighbors at Stockton Lake.
He got a Char-Griller Pro for Father's Day and smoked his first brisket. I'm getting him there. Pushing him to get on the forums.
