Here is how we make fatty breakfast burritos. This is the basics, you can add whatever you prefer. Makes 6-8 burritos. 1- 1 lb. fatty of your choice, chopped 1- 4 oz. can diced green chiles 1/2 cup chopped onion, Vidalia in season Put all ingredients in a skillet and cook over med. heat until onion is translucent. Scramble 6 eggs and add to the skillet mixture, mix well. Spoon mixture onto warmed flour tortillas with sour cream, salsa, grated/shredded cheese, jalapeno slices, chopped fresh tomato - whatever you prefer, and roll up. You could add some hash browned potatos or tater tots. Or, do the Bud (of Bud & Tonto) thing and spoon everything over a bowl of cheese grits! ENJOY!
