Back ribs on the UDS

I need to get a hobby.. So I got some beef back ribs from the butcher shop. I don't know if this cow was butchered or if the poor thing starved to death. There doesn't seem to be much meat on the bones. Ohh well, a little cracked pepper, some kosher salt and some garlic and on to the drum it goes for a 3-2-1..

I am always surprised at how bad back ribs look and how good they taste. I often wonder where places like Jack Stack in Kansas City get their beef ribs. All in all, I love a good beef rib. Looking forward to seeing more Qview.
 
is the 3 2 1 the way to go? I've never done beef ribs. I don't want them too tuff but I don't want them to seperate from the bone either. I'm at 3 hours right now, gonna check em and foil..
Had my drum runaway to 333 degrees! glad i caught it in time. My dog must've sniffed at the damper and opened it a little.. took the lid off and did an "emergency blow" and let the heat out. I got the coals to simmer back down into the 245-250 range..
 
Unfortunately that is one of the biggest problems with beef ribs, so much bone and so little meat.
Keep your eye out and if you ever get a good deal on some meaty beef ribs then stock up.
I actually don't do beef ribs very often because of what they try to pass off in the store so I will wait until I can get some good beefy ones or until I just can't take it anymore and have to do some beef ribs!
 
Those look amazing. Now I have the urge to do some beef ribs. Luckly, I buy in bulk when I can get them cheap. Pulled some out of the freezer this afternoon. Supper tomorrow.

Everything (beef ribs) I see in a grocery store looks like it should have a buzzard sittin' on it. I got these from a local butcher shop, Midwestern Meats. Great place and they always have just what you'r looking for.. Love the hometown, ma and pa joints..
 
Not the best pic but, hey, I wanted to dig in! The ribs were just awesome but the meat was scarce. I also brainfarted and forgot to remove the membrane.. I do this like clockwork on baby backs and here i forget to do it on beef ribs. very noticeable.
I don't know if I'm gonna do beef ribs again unless they are damned near free or really full of meat.. Just not worth the price to me..
 
Cub Foods here (now part of County Market) has better beef ribs than the other grocery stores, but Sam's Club are the best! They really surprised me with the amount of meat...

But it looks like you cooked yours right!
