Hey guys,

I got 2 slabs of Baby Backs on the GOSM. they are really really meaty, and have been smoking them for 4 hours so far. 3 hours naked, and 1 foiled. I peeked and notice that they are still not pulling back much and just have that look that tells me they need longer time.

Smoking at 230-250 with apple and hickory.

Should I keep em in the foil another hour then unwrap em? It looks like they might need a 3-2-1 judging by the looks of it.

Should be safe right?
 
Well Martin I would say to take them out of the foil and put them back in the smoker for the last hour. You said that they wee very meaty so maybe you have some ribs that you wouldn't get any pull back. So if you want sauce them and throw them back into the smoker. And Martin I have noticed that there aren't any Qview going on here????
