Worked up a dinner of ribs, chicken, ABT's and Macaroni and cheese, and corn on the cob using my mini UDS and MES 30 today. Baby backs were marinated overnight in Mt. Dew, worchister, soy, garlic and onion powder with water. Chicken was brined overnight in salt, sugar, honey and water mixture. ABT's filled with cream cheese mixed with my rub and granulated sugar and pepper jack cheese. Did the ribs and chicken in mini UDS with temps around 250 for most of the cook, but ramped up to 300 for the last hour on the chicken. ABT's and macaroni were done in MES using AMNTS with Cooking Pellets blend of hickory, cherry, maple and apple. Everything turned out good ( Mac was a little over smoked using the tube ). Ribs were rubbed with my rub and let go for 2 1/2 hrs and then foiled for an hour before being mopped with a mixture of Bulls EyeTexas blend and Sweet Baby Rays original sauces. Ribs were great but not as moist as I'd like, yet still tender and flavorful. Chicken and ABT's were awesome. Cooking pellets brand work great in the A-Maze-N products and have an amazing flavor too. Run the mini on lump for 4 hours total and used about a third of the basket, pleased with the results but did have to chase the temps a little, especially at the beginning. Photos are from beginning to end, didn't take them of every step but enough to get the point.
