I wanted to try using all ash wood since i've smoked with it mixed in.  I have access to lots of seasoned ash so it was a worth while experiment.    Loaded up some baby backs and cooked over the fire. Temps ranged from 275-450 but averaged about 300-350.  It really doesn't matter what temps cooking this way.  I got a setup to do 3 racks like this but just one for now.

Here we go, I left the membrane on and seasoned with a Jamaican jerk rub.

This is in the middle of cooking, please ignore best as possible my background Q music singing.

I told you the singing was bad,but that was just some back ground Q singing. [IMG]        Oh I forgot the ribs were done in an hour and  half!

So you're saying i shouldn't enter the karaoke contest?    [IMG]

I can't help a little back ground singing when some good tunes are on and the smoke is flowing/meat spinning....it's a weakness!

Terrific idea for cooking ribs. I didn't hear any background singing but was there a cat being stepped on from time to time?

LOL the singing wasn't so bad! The ribs looked like they were basting nicely on the rotisserie!! Did you notice any flavor from the ash wood?
