Eric, do you know what type of wire (cord) is coming off the element?
I want to get that element and am trying to put together an order and need to know if I'm going to have to replace the wire (cord) on the element. In my smoker I'm not able to take the cord out the bottom like you did.

Are you referring to the wire gauge?
 
I don't know, it's a 3-prong plug so you'd just want to use a gauge that can comfortably handle 1500 watts. I don't thing it's a high temp cord because its made so the cord would exit at the bottom of the smoker.
 
Not sure how I missed your thread but I did. I am collecting the components for my smoker.  I picked up the same element and will be using the Aubers SYL-2353 PID to control it. I dont plan on an audible alarm, but may get another read out like yours for meat temp.
I ended up switching to the SYL-2352P - which allows programmable steps ... At some point I'm planning on programming common "profiles" and I would then just jump to the appropriate starting step for that profile - I could imagine these profiles could be cold smoking vs hot smoking, chicken vs ribs vs brisket, something like that.  I've not played with the programming yet but it looks promising from what I read.

If all your doing is setting a temp, then the SYL-2353 will work fine.

I meant SYL-2352P... Just forgot to put that in there! The whole reason for this new smoker is for sausage and jerky. So having the step set-up in there will be critical. To begin with I am just going to use the electric element with the PID in my GOSM.  I have a few honey-do projects I need to build before I can start the smoke chamber. This should be fine for the summer, but once winter rolls around I doubt I'll be able to maintain temps in the metal box.

Yep, you'll definitely want the SYL-2352P ... I think you might be surprised at how much heat the element can put out - I'm sure I could get over 300F if I wanted in my smoker.  If it doesn't put out enough in the winter for sausage and jerky, I'd think you might just get away with building a insulated box that can be set over/around the smoker ;)

I've thought about the insulated box. I had to do that a long time ago with my first charcoal smoker to smoke a turkey once.

I get bored and have to build stuff so once the honey dos are done I'll build the dedicated smoker.

Yep, totally understand ... I enjoy planning and building projects myself versus buying them.  My wife's work requires her to be out of town twice a year 10-12 weeks at a time, so that's when I get to work on MY projects - makes the time go by faster too ;)
 
I'm with you on the DIY! I was thinking of buying a weatherproof box for my controller then thought "I have some leftover siding, I could just build a weatherproof box and make it exactly how I want and it will be almost free at this point", so that's what I'm going to do!

Ya ... I thought the same thing, but I had already used all the left over siding I had on my smoker build (left over from my shed build - that's sort of what prompted the smoke house build).  My next big project is a stone patio with built in fire pit ... Hope to start and finish that project before my wife gets back home at the end of June ;)
 
I think there is enough air space between the AMNPS and the element that it won't effect it much. Right now, I have a pie pan full of pea gravel to provide some thermal mass between the two ... I'm also thinking of replacing the pie pan with a piece of ceramic tile.
