A good hearty soup, very popular around our place- Hungarian style potato soup. Recipe for about 6 servings. 4 Medium potatos, spoon sized chunked 1 medium onion, chopped 3 cups water 1/2 pint sour cream 4-5 strips bacon, chopped 1/4 tsp CBP 2-3 bay leaves 2 Tbsp flour 1 Tbsp butter Salt to taste- the potatos REALLY suck up the salt... In a deep pot, fry up the bacon, adding onion and butter as the bacon starts to render. Add flour, brown mixture lightly. Add everything else EXCEPT the sour cream and simmer 'till potatos are tender. About 5 min. before serving add sour cream and mix until smooth, and salt to taste. A dash of paprika adds a nice warm color to the soup and a nice flavor as well. This soup will warm the cockles of yer heart, garanteed!
