My wife just bought me the cheap little Brinkmann smoker.  So I'm just starting out.

Instructions say to "cure" it, so I am burning some charcoal in it right now.  Not sure why that is necessary.

Plan to smoke some ribs tomorrow, then some chicken next weekend.  Once I know I can make it work ok, it's on to brisket....

This is the first time I've used charcoal in 20 years (piped my big grill up to natural gas way back then...)
