Just wondering, when you guys do boston butt in the smoker, how much smoke do you give it? Hopefully not a crazy question but I never feel like I get enough smoke. I have one in right now that I let smoke for about the first 5 hours. Just waiting on 195 now.

Everything I ever smoke gets TBS (Thin Blue Smoke) every minute that it's in my MES 40, except when it's either foiled or during pellicle forming, before smoking (fish & cured meats).

The big thing is "Don't use Heavy Smoke on Anything". Just a short time of heavy smoke is a bad thing IMHO.

Hey, thanks Bear. Maybe that's why I never feel like I get enough, I don't let it smoke the whole time. And I agree on the heavy smoke being bad, I have made that mistake before. I'm using an Amazing Pellet Smoker in a MES though, hard to get anything but TBS with that thing. The IT on my butt is 160 now, think I should light the AMZPS back up till done? I'm using a mixture of Hickory, Cherry, and Apple.

Wouldn't hurt if you're not going to foil it.

I usually foil my butts at 165*, so it wouldn't be worth it for me to re-light my AMNPS at 160* if it had gone out.

And yes---About the only way you can get smoke that's too heavy with an AMNPS is to light both ends. I tried it one time, and ended up putting one end out !!!

BTW: Pulling at 195*IT might make it hard to pull. I usually go to about 205*, unless I'm going to slice it.

Thanks again Bear, I usually don't foil mine as I'm a big fan of the bark. I'll light the AMNPS back up and let it get some more smoke. Thank you again for the help and suggestions.
