Albuquerque checking in

  1. Went by the discount meat section.  The package was labled "pork stomach".  Naturally, I snatched it right up.  Cure it for seven days and onto the smoker.

  4. This was after two hours in the smoker and after the first baste.


    This after three hours and basting a couple of times more.
