Got a new Masterbuilt gas smoker (MGS I guess) last weekend. Did some smoking then and just playing with it right now to try to figure things out. I've already starting using an iron skillet instead of the wood tray to try to prevent flare up of the chips/chunks but still not having any luck. Gas setting is all the way down. Three questions... I have heard not to use chips but the instructions for the smoker says "never use chunks". Do I use chunks anyway? How do I prevent them catching fire? Also, I have seen people saying not to use the stuff from Home Depot. What brands do you suggest and from where?
 
Cover the pan with aluminum foil.... have several holes punched in it.... that reduces the oxygen and flare ups.... use fewer chips maybe...
