Adding Bacon To Sausage

    I want to add some ground bacon bits to some chicken sausage to be smoked.  Should I cook the bacon before mixing?  Does anyone have a chicken bacon recipe?

    LC, I have never added bacon but I would think it should be cooked first. It would probably screw up your meat to fat ratio if added uncooked.

    You can use the bacon in place of fat with chicken sausage. Buddy of mine did it last year and said it was the best chicken sausage he's ever made. 20% bacon I believe.

    I think if you cook it first it will give the sausage more bacon flavor.
