Anybody ever cut an access door in yer UDS? Just wondered ifin it would make reloadin the basket easier? Just thinkin, usually gets me in trouble though!

If you make a charcoal basket with a handle on it, it's easy to access. Cutting an access door would cause air leak issues and it would be hard to control the heat unless you could seal those door seams. The whole point for a UDS is to cook low and slow and control your heat. Too much air uncontrolled turns it into a grill instead of a smoker.

Trav, its my understanding these things will cook for 12-20 hours with coal to burn. Not sure how they put additional wood chunks in though. Great question.

8 lbs of charcoal and 3 fist sized chunks will go 16 hrs!
No need for a door.
