7 layer Bean Dip

    This is a good snacker that goes with all types of chips. layer from the bottem up with:
    Refried beans
    sour cream
    your fav chile powder or rub
    shredded cheese
    tomatoes
    Grenn onions
    olives
    Jalapeno slices (optional)

    Nice to have while you're waiting on a smoke, also great with a brewsky.

    Always good recipes coming from ya, Rich [​IMG] I'll definitely have to try this one out on my co-workers at the next pot-luck. Heck, maybe as early as next Sunday!!!

  3. Boy,I was going to cut back a little on my food intake this week,but I'm going to have to try your 7 layer dip.[​IMG]

    Wifes been making that for a long time. Very good dip. It goes way too fast. People think it's a side dish and not a dip.

    Try mixing the seasoning and the sour cream together when doing this 7 layer dip (this makes a nice little dip all by itself too).

    If you're real lazy, and/or don't have good knife skills, you can substitute chunky salsa or a can of diced tomatoes.

    I also enjoy cilantro with mine.

    One last idea: Add pulled pork (everybody's got some leftover pulled pork...right?) and serve over tortilla chips to make a nice nacho/taco salad/7 layer dip dinner.

    I've been making the dip for about 16 years, I've tried all your great suggestions and then a few. I have not tried the pulled pork version because I wasn't smoking 16 years ago. But I will save some pulled pork just for that reason. Mucho Thanks.

    I love NM, when we where looking for new digs, I suggested NM. The wife can't be that far from her family. I still love it, all the chiles I grow are of NM origin, NuMex Sandia, Chichimeca, Alcalde, and Chimayo.
