Don't I wish. This is for my lawyer tomorrow. I gave her a taste last time I saw her and said next time you come here bring a pastrami. I quoted 8 dollars a pound but I wish I could charge her hourly rates, which are 155 dollars an hour with a Pre Paid Legal discount plus she gave me another 8 percent that brings it to a 33% discount, but still, 155 dollars an hour? Total bandits.

Anyway, I am rushing this one and at least starting high at 275' as my last stalled at 165' forever and I just put it in the fridge for the night and then steamed the mext day.

Using hickory, cherry, to start, and some mesquite.

I like the mix of smoke. Should be a nice combination for Pastrami.

Maybe I'll get 2 briskets friday when I'm on the road...I really want to do a Pastrami, but I got have another brisket smoke for sure! I'll have to see how bad the prices are now...last ones we got were on sale @ 1.88/lb.

Got a 10lb brisket on right now, in the third hour of a bad stall, 162.
 
Not good, but stay with it. Mine has just dropped from 165' to 158' after I lowered the smoker to 225'. I am going to raise mine to back to 275'.

I sliced it this AM.

Nice and shaved. My attorney loved it, she and her assistant had a sammie while I was there.

I just looked up from my laptop and saw this. Spectacular to say the least, I have some comments on my views so I thought I would share. It only lasted a very short time and is gone already, glad I had a chance to see it.



Another quick review on my new Chef's Choice slicer model 610 from Home Shopping Network hsn.com, I gave it a 5 star rating on both amazon.com and hsn.com. It worked flawlessly and did a good job of shaving it.
