4 1/2 sheet smoker PICS!!!

Some pics of a sausage smoke we did at the beginning of the month.
Finally figured out how to post pics.

The smokehouse is just 4 sheets of plywood and some L brackets for the sides and I used slightly more than a half sheet for the top because I wanted a little eave over the door. My sister and I cut out the door and assembled in an hour or two. We butchered a hog and broke out the family heirloom stuffer. It was the first time we had atttempted stuffing sausage without Dad and it took a couple of tries to get the hang of filling the casings full, but all in all we decided we did pretty well.




Used the drawer out of the CG for the fire..




A little over 50 pounds of smoked sausage..



A lot of work, a lot of fun, a lot of great tasting sausage.
 
I got up to 110 once when I was having a flareup, but mostly in the 50's or lower. My Dad built one of these years ago and we never noticed any ill effects ill effects ill effects ill effects.

hahahahah..............yeah.........perfect for cold smoking.........hot smoking you have to worry bout the glue in the plywood, they say.......say

There is no designed air inlet or vent, but it is just 4 sheets of plywood held together with L-brackets and a piece on top, just sitting on the ground, so it ain't airtight by any stretch. I stuck some extra screws in to close up the bigger gaps, but it still was able to draw. The beauty of it is that it is now 4 1/2 sheets of plywood stacked against the wall of my garage, out of the way. Also makes the garage smell great!!!

Sausage looks great, smoker does too. If I may make a suggestion. You might want to make a small steel table about 2" larger than the grade that holds the wood. Make it about 12" to 16" higher than the top of the wood you will be using for smoking. Once the wook is smoking, place this on top of the fire. It will help eliminate flare ups as well as act like a heat shield.
This worked for me in my cold smoker. I even drilled holes in mine to allow some smoke to go through.
