So I'm gearing up for the 4th of July! Plus I'm in the garage all day with my helpers making a cornhole set for the 4th.

I bought 3 good roasts at Meijer:

I rubbed 1 with the following Rub:
4 TBS Paprika
4 TBS Dark Brown Sugar
2 TBS Kosher Salt
2 TBS Coarse Black Pepper (CBP)
4 TSP Garlic Powder
4 TSP Onion Powder
2 TSP Ground Cumin
2 TSP Instant Coffee
2 TSP Cayenne Pepper

Mix all ingredients in an old coffee grinder and grind until fine

The 2nd roast was rubbed with Montreal Steak Seasoning and the 3rd with Kosher Salt and CBP

Here they are in the smoker (Drippings pan includes 2 cups of Apple Cider Vinegar and 24oz of Beef Broth):

I'm off to build the cornhole set now with my helper. More pics as we get along throughout the day.
 
Looking good...I feel kind of silly asking this, but what exactly is a "cornhole set"?

Lol I thought the same thing when I first moved to Indiana. Cornhole is an outdoor game where you throw a bean bag onto a box that has a hole in the middle. In illinois we called the game "bags" , here it is called cornhole.
 
Brad's right...it's a very Midwestern thing...specifically Illinois, Indiana and Ohio.

My buddy at work who is from LA laughs every time I say it. Then I hear dueling banjos and it all goes downhill from there.

It's like horseshoes but they're portable. Same rules basically.
 
Yeah, where Im from "cornhole" is something completely different!

I think it got its name from people using dried corn in the bags.

Yeah the bags are 4"x4" and have dried field corn in them. Hence the cornhole...

Now when I used to think of cornhole, I thought of the movie Deliverance but that's just me.
 
I'm glad you guys figured that one out I was starting ti get scared because here in Fla it means something really differant. Oh yea nice looking chuckies I bet they will be wonderful.
 
wow i guess it must be where your from what ya read into this.
since this is a smoking forum and once the ? was answered we would just smile and play the game.
 
The chuckies are looking good and I'm about 75% done with one cornhole board.

The chuckies are foiled now and I'll take them out of the smoker at ~200F.

Just pulled the first chuckie out at 202. It's wrapped up in foil and an old towel and off to the cooler! the other 2 are coming along nicely!
 
Well everything came out right at 200/201F. Overall, I'm impressed with the rub I concocted. I'm still disappointed in the chuckies not pulling very well even at 200F. I'm going to re-calibrate my therms again, but they were checking out before the smoke.

Here's the fatty with the new rub...great color, good smoke ring and great flavor all the way through...totally my favorite, but still disappointed I couldn't pull any of these very well

The S+P and Montreal one are going to be used for sammies and the rubbed one is going into some of my chili tomorrow or Tuesday.

P.s. The cornhole board project made some more progress, but I got tied up with the smoker. Anyone got a good way to cut a 6" diameter hole cleanly? The Dremel and I are not working so well together so the hole is jacked.
 
In Chicago corn hole was x rated so I won't tell. All I can say is you didn't want to get corn holed. Nuff Said.

Back to the subject, the chucks look good.
