Ok, here we go again. I got a bit lazy with the pics this time but the basic setup is the Weber Performer 22.5" kettle, Stubbs charcoal using the minion method. Used 3-2-1 (actually 3-2-.5, they finished early) This time I did three rows of coals in a semi circle goung around half of the kettle, then I stacked a double row on top of those. I lit 12 coals to start the whole shebang and this gave me nice range. I got her locked in at 250F and she sat there for a good 3hrs without me tinkering. I did have to add some more coals in hour 5 because I was afraid I would start to loose the heat. here is the meat, 13 bucks for 3.75lbs. All rubbed. I used mustard for the glue and mixed up 1/4c brown sugar, 1 tbs salt, 1 tbs garlic powder, 1 tbs onion powder, 1/2 tbs pepper, 1/2 tbs chili powder. Let it sit for a few hours. I planned on doing this last night but apparently I'm sick so off to bed I went hoping to feel better today. Money shots! I did a little dance when I saw the smoke ring.
