Well wife bought me a bbq pro charcoal drum style smoker for my b-day did a few small smokes but figured today id give another brisket a shot on the charcoal had a tough time getting the temps over 200 for a while after i added meat checking with 2 different thermometers then all of a sudden bam 256 was it due to the meat mass being cold? i want to keep at 225 -230 so it will take a little playing here and there.i didnt take any before pics as i was in a rush since this was supposed to be smoked tuesday but mil fell and broke her neck so was in the hospital for 3 days.I will post pics soon as i go to spritz
 
dude i was the first one there and watched her forehead droop down and seen her skull almost passed out it was brutal
 
Man I'm really sorry for your MIL and I hope things all work out. But I wouldn't worry with the brisket you have other bussiness thats alittle more important to deal with.
 
thanks guys im guessing this brisket wasnt ment to smoke finaly get the temps stable and it starts freaking pouring agghhhhh
