2011 Fourth of July Meatstravaganza! with Q-View

    In honor of the holiday, I'm doing a big smoke for friends. Brisket, ribs, chicken, and chili are on the menu. Enjoy the Qview. I'll update as I smoke.

    Used a new rub recipe that I'm trying out.

    Sauces - For some non-Texan friends

    Ancho Chile Sauce

    Sweet and Smoky Sauce

    Brisket: raw and rubbed:

    Ribs: raw and rubbed

    Rub for both ribs and brisket:

    Texas Chili - Ingredients and during simmering:[​IMG]

    Smoking begins tomorrow at about 5am. Gonna add a whole chicken which is getting brined, rubbed, and beer can smoked as well. I'll update with QView. ENJOY THE 4TH!! :sausage::usa:

  9. Looking Great. Love the variety of both meats and sauces.  Going to enjoy my pulled pork, but man, your Q looks like the place to be.

    If it is not too late, try a Dr. Pepper, Root Beer, Coke, or any other non-Died soda in place of the beer . . . it works great!

    I call it "Violated Chicken"

    Looks Great Anthony but I have a question, If you eat Chili on the 4th of July what do you eat in COLD weather? LOL

    Pure hot sauce made from puree ghost peppers :):devil:
