Howdy folks, We got a 10lb brisket for the 4th.



got it rubbed with mustard and dry rub Thursday night and let it sit in the 'fridge overnight.



popped it into Nola at about 6:30 or so



After 4 hours





after 8 hours



We put a pan of beans under it after 8 hours



At 12 hours I thought maybe I should check the temp. It was at 200* I checked it in 4 place. The probe went in like a hot knife thru butter

The smoker was desgned and built by a guy in Grand Rapids, Mich. I found it on Craigslist. It is definetely different but I like it. I used less than 4 lbs of lump charcoal and I believe about 6 or 8 pieces of wood to hold the temp for 12 hours. I think that's pretty economical fuel consumption. There are pics of the internals of the smoker in another thread I posted. I think it's title is Nola Mae and The Pit. Peace, Wanbli
