2 Easter Butts with Q-view

Figured it was time to do some butts as family was coming over and that was the request. So, I did 2 six pound butts. First, I injected and then marinated them in Mojo for 48 hours. Then, I put on Jeff's Rub and wrapped them in Saran wrap for 48 hours.



Once cooking day came, it was cold so I used sand instead of water. Hickory was the wood. Here they are at the 3 hours mark and when I started spraying with apple juice.





One went fairly quickly and the other an hour later. I foiled both when they hit 170:





Once thye hit 200 internal, they went into the cooler for an hour before pulling. Finally, the meat just fell off the bone. They were the most tender butts I have ever done as well as exceptional moisture. We got two pans like this:
 
There ya go, My mom was just commenting on the fact that it's too cold to smoke meat...and she's in lakewood! Your pork is making me hungry for mine. i still got several degrees to go.
 
looking good abel............i also brine.........but have never injected......will have to give that a try the next time
