Discussion in 'Pork' started by deskjockey, Aug 13, 2009.

  1. ok I smoked 4 butts and pulled them this past weekend

    Here are the results:

    rubbed butt

    another rubbed butt

    the small butt

    rig after 3:45 AM rain

butts with 8 hours to go....you can see on my timer.

    humidity fogged up the lens

    all four

right before pulling and putting in oven to bring up to 200 then resting for another 3 hours

after resting for 3 hours...at this point I have been awake for 30 hours

    smoke ring

and the greatest looking butt ever

realized my rig cannot bring the temp up, so I had to put in oven and get to 200

Looks great. But as to "The greatest looking butt ever." I would have to disagree. I saw Linda Ronstadt in concert, front and center about 30ish years ago. The butt in your picture wouldn't stand a chance. [IMG]

  5. Thanks!

as to greatest looking butt...I meant BBQ LOL

I slapped the pull with the finishing sauce recipe on here, but used lea and perrins and a hot sauce.

The bark on those is excellent, didnt taste to good the day I pulled.

After a couple days, the PP was insane.

I wonder how the people who do PP at competitions do it when they have to serve on the same day

    Nice PP burn, and qview!

Gotta do another for my family again, real soon...

    Thanks for sharing!

  8. Appreciate the thumbs.

I have rib qview from the last few years, I didnt think anyone wanted to see it.

Figured if I did PP, I could do anything!

I have a small brisket in the fridge ready for this weekend.

Thanks MrPinkdontTip for the pastrami info

COOL!!! Yeah, fire that Char Broil up again...you're doin' good! I found PP to be relatively easy myself, but everyone has different experiences with new smokes then the next guy might.

I have to get my hands on a sale paper 'cause I don't have anything big enough in the freezer to entice me to do a smoke. So, I guess I'll and make a quick road trip for some thawed meat on Friday.

I hope to join you Saturday for a qview fest! Heh-heh!

Keep it thin n blue...good smokes!

  10. Tarnation, Deskjockey!

Those are some excellent looking results. Kudos [IMG]to you for the late night smoke and braving the elements. Glad to hear the PP was greatly improved after a day's rest as we thought. Can't wait to hear how your pastrami comes out!

Funny, I always thought RIBs were harder to get right than PP. Seems like every new smoker owner throws RIBs on immediatly. I know I did.
  16. not upside down when its open lol I figured wasnt going to advertise for them unless they give me sponsorship money [IMG]

Bigsteve, thats what I did too, but ribs dont require such a large time investment.

Just seemed to me that the longer you smoke, the more procedures in something, the more room there is to screw it up

    Thanks for all the compliments
  17. That's some nice looking' Q. Great job!![IMG]

I wonder the same thing. I made a couple butts on the chargriller last weekend. It tasted OK on the first day, but the smoke flavor was weak. The second day it tasted great. I have come to the conclusion, at least in my experience, that pulled pork is like chili or lasagna. It is always better a couple days later once the flavors have permeated the entire dish.

What did you NOT like about the taste when ate right after pulling/cook?

    BTW they do look good.
  20. just seemed to not have good flavor, but like macdad stated, the next day they were killer.

Neighbor walked up to me last night after the race, I gave him about 2#'s a few days ago, says he couldnt stop eating it and finished everything up in one sitting lol
