Nice looking piece of meat there and I dig the price.... Beef is ridiculous in PA right now...Best I could find was $9.99/lb boneless, but I still bought twice what I needed...Gotta have leftovers of this!!!

Got this from my wife for Christmas - will it work ok for occasional sausage/brat making?  
What a nice gift!! It'll work for sausage just fine. Just make sure you hand wash the tubes. I put mine in the dishwasher and the biggest one melted. Also make sure to cut your meat in 1/2" strips and put it in the freezer for a half hour before you grind it.
 
Oh yeah!! dogfish head is awesome stuff. I discovered the hard way why their 90 minute IPA comes in 4 packs!
I get my sausage casings at a butcher shop that makes their own sausage. If you can't find them locally you can get them on Amazon or lots of other online vendors.
 
any particular kind for sausage?

I want to make andouille to start - then I will venture out.

Looks great man. How is it progressing? My sister has mine in her dang oven. 19 pounds, at least she borrowed my maverick wireless. I am sure it will be overcooked though. lol. can't wait to see yours.

I have both. The grinder is really good for a kitchenaid....it isn't the most ideal but I use mine for grinding my product. Now as for those sausage tubes, I thought they were junk. Reason being, they are placed very high on the machine when most stuffers have a bottom exit for that stuff. I dont use them I bought a stuffer.

Lastly check out The Sausage Maker out of Buffalo NY... Great prices and do run specials a good bit.......
