15lb Brisket in the Cold and Rain.

    Two weekends ago I decided to do a nice brisket (been to busy to post sooner). It was cold and raining so I wanted to keep my MES dry so i picked up a crate on the side of the road I thought would work well. I used the A-Maze-N 12" tube with pitmasters choice pellets and filled this up twice.


    Brisket was too big for the smoker so I had to improvise and cut the end off.


    Brisket went in the smoker at 250° at 7:00 pm and I pulled the small section at about 4:00 am with an internal temperature of 190°. Wrapped this in tinfoil and into a cooler covered in towels. Here it is sliced the following morning around noon.

    Here is the big section I pulled at about 6:00 am with an internal temperature of 190°. Wrapped this in tinfoil and into a cooler covered in towels. I forgot to get a picture of this section sliced up (I was too tired) but it came out great and made for a fantastic dinner.

    Thanks Guys. My plan is to take the box and put it on end. I am going to add a shelf to make the MES at a good height and then put shelves for storage on the bottom. Also a door so I can close and lock it up and leave it in the back yard. 

    That is the plan anyway.

    Nice smoke!

    Put a pitched roof on your new smoke box and it will be all weather. Pull the MES out and it becomes a great cold smoker!

    OK, So it finally warmed up here in Michigan enough to be outside and work on some projects. So I decided it was tired of carrying my MES in and out of the garage all the time and it was time to set up my crate. I picked this up on the side of the road and used it through the winter as a wind/snow break.

    Here it is with the shelf added

     

    Here it is with my smoking bins in it (door attached)


    All buttoned up so I can leave it out side.


    Next step is to pipe the smoke out the back, put a slanted roof on it so water does not sit on top, paint (so the wife does not mind it and then to move it off my deck to a spot in the back yard next to my Oklahoma Joe.
