    Woke up at 0500 and checked it and it was sitting perfectly at 230

    Then I woke up at 0630 and proped it and seeing progress is coming along great

    2. I figured the cleaner I keep it, less problems ill have.

    now i moved the temp stick....i put it closer to the end and it read 192... in the middle 178-179.

    I go into the middle is 200ish?

    I shoot for 205* - 210*. Yes, in the thickest part of the meat and stay away from the bone.

    That is some pretty Bark on the Butt! Stall sucks! I been at 154 in a 6Lb Briskey and 148 in a 4Lb Pastrami for 2 hours so far...JJ
