I am thinking of smoking half a brisket instead of a full one.

Would that reduce the smoking time to approximately 1/2?

Any concerns or extras precautions?

I assume I cut it in half along the short width?

thanks,

Dean

I'd separate the point from the flat to 1/2 it -- I can actually buy them this way from a local grocery store.  Also, the smoking time won't necessarily be reduced to 1/2.  I'd plan for it to take just as long and keep an eye on the temp.

I hate to be the one to bust your bubble of smoke times. The fact that you cit your brisket in half will shorten the smoking time but it won't cut it in half like you are thinking. Now I always smoke a whole brisket and soon you will learn why. So as a good member of SMF I will tell you now. Because of the leftovers are some of the best that you will always make. So next time smoke the whole thing.
