Here's a pic of the smoker. It's approx. 48" long, and 19" diameter. The 2nd pic is with it loaded down with 3 slabs of ribs. In the past, I have split the ribs up into sections because it makes it easier to handle if they start "falling off the bone". I have since bought a rib rack that...
They have 4 catagories. You can enter all, or just the ones you want. Of course, I entered all. Might as well rock this thing big, or crash hard, right? lol
I'll be doing 2 pork butts, 1 brisket flat (just posted about this in the beef section), 3 racks of ribs and 2-4 chickens. I bought 4...
Doing a contest this weekend, and swung by sams yesterday to pick up my meat. They didn't have any whole packers that caught my eye, so I decided to go with a flat. This will be the first time I've done a flat (I know, I know....a contest isn't the time to try something new). But I bought it...
They had one similar to that at the place I stopped by. But since I don't see myself needing one for a roast (or whatever else you put on the "bottom" side, I decided to go with the one mentioned above. If I remember correctly, the one you mentioned was a bit flimsier (not to the point that I...
I hate buying stuff online without seeing it first! lol After your guys suggestions, I went to the bbq supply place up in the "big city" (I live about 40 miles from Wichita, KS) to take a look at what they had. I ended up grabbing the one in the 2nd link you posted, RowdyRawhide. I'm going...
I'm going to need to put together, or buy, a couple rib racks. Right now when I smoke ribs (spare), I cut them into about 4-5 rib sections. I can fit 3 racks on my smoker this way. However, that's not enough! lol I cut them mainly for handling. It's so much easier to handle a few ribs than...
Hi pops! That's some great information there. Definately more than I already knew, and too much to all take in at once. lol
I do have a question though. I had posted this in another section, but didn't get much of a responce. I'm assuming the lack of responce was because I had it in the...
Thanks for the response! I'm not worried about doing the large cuts, but a whole hog, or even half, would be a bit intimidating.
Also, would it be ok to cook a week in advanced and freeze it until the day of the wedding?
Here's a pic of the smoker doin some ribs a couple weeks ago.
A friend asked if I would smoke a pig for him for his daughters wedding. The only problem is, my smoker isn't even close enough to do a whole hog. So it would have to be processed to some extent.
However, I have no idea how to tell him to have it processed. My homemade smoker is 48 x 19...
Listed on craigslist as a "New Braunsfels". I emailed for some info, and he says it's approximately "2 feet by 3 feet". Asking price is $175 (negotiable).
Anyone have input?
Spatchcock or Leaping Frog info on 'smoking meats forum'?!?! LOL Something dirty about all of this. Never realized I was going to get a karma sutra lesson. :)
The first one I did, I don't remember how much it weighed, but I did it around 325 and it didn't take very long. I know it didn't take 30min/lb. Maybe 3-4hrs. Is the 30min/lb for lower temps?
Thanks for all the quick replies. I think I will just smoke it with out splitting it. I've got mesquite, apple, pecan and cherry. How does apple and cherry mix sound? 2:1 apple to cherry.
Dustin
Howdy all. Been a long time lurker. You all have helped me since I got my first smoker, and through till now (custom built offset smoker) - you just don't realise how much you have helped. I know I should have started off it the Roll Call section, and I promise I will. However I think I have a...
