    I've been cooking at around 232ish the whole smoke, butts are about 7.5lbs each.  I hadn't planned on foiling, only bc i don't want to soften the bark too much.  It finally started climbing a little but very slow....it's at about 168 now after 13 hours in the smoker.  How will it affect the meat...

    Welcome to SMF, i served 8 years in the Army....just got out last year.  I would have to agree that a nice boston butt is a good starter.  That was the first thing I smoked (i think :-))  Like smokinstevo27 said, it is very forgiving.  If you don't already have a good digital therm i'd get one...

    Hmm, sure it was ash??  maybe you were making too much smoke??  Were you shakin the coal pan around alot??.... bc just like grilling when you disturb the coals too much....ash goes everywhere and in a smoker the only place for it to go is on your grub.   i don't know, i'm sure someone else will...
