    Stoker

That looks very interesting. But I'm not sure I understand what benefit two fans provide that one larger fan could not. AZRocker, did you notice that the entire exterior of this fella's Char-griller is custom fitted with welding blanket material? I'm wondering how well a mod like that...

    Deer vs. BWM

Yea, thanks for that Q-VIEW. What a ya think? That deer meet getting up to 'bout 180 degrees on that manifold by now? Ha! Gross!

    Brisket is on

Wheehoooo. Nice food pron sir. I should stop looking at q-view before I head to bed. All you guys gets me started on the late night snacking and I'm already over my weight limit. That IS beautiful for a first time. Great one!

    BBQ Bubba... your best brisket?

I can't believe it. When I saw the q-view of that brisquette, I actually spontaneously just let out an "Oh". Bubba, I am ashamed to have to announce this, but you made me moan.

    HHHm... I enjoyed that.

    Virtual tour of local church

Wow, beautiful place. I flew over England once and landed at Gatwick. Then I had a bus ride to Heathrow. That was all I saw of England, but I enjoyed the little I saw. Most of the countryside looked groomed and the old houses and pubs were "Old England" as I would have envisioned it. I would...

Rib Reviver and yet another Cardinal sin.

Thanks for the post CA. I get it. I didn't take it as advocating for boiled ribs, but as an option for when options are limited (with tongue firmly in cheek). I like to see the shared experiences posted here for better or worse. It just makes things more fun...heh, heh, heh.... It is a forum...

    Smoked Hen--not too good

I wonder if slow cooking it the next day in a crockpot with a little broth at the bottom of the pot would bring her around? I know I keep mentioning crock pots, but I remember a lot of real tender meat coming out of them. With the smoke of the previous day, it might come out real fine.

    Smoking a Turducken

Ahh... yes I am ignorant. Can someone tell me what turducken is? Sounds like something I caught on my shoe. Old First Sergeant used to call it "Duck Butter" when we were dodging our way through it on the PT (exercise) field.

    Why are you at SMF?

Oh, yea, by the way. Why am I here? I'm here to be with the "in" crowd. Just us regular folks here. After working in the city all day, I need some kind of contact with NORMAL people.

    Why are you at SMF?

Well... if I wanted to try roasting some columbian (coffee beans I mean, I'm thinking of you Mr. Aardvark), where would I find raw beans in the states and what wood would I be looking for? Maple maybe? It would definitely need to be subtle.... Me and Juan Valdez, we got a thing goin' on...

Spare Ribs on my CB American Gormet w. QVIEW

That's a sharp idea Tom. I think I did have some pretty good temps with the Kingsford on the first burn. Though, I didn't have the baffle then, nor the basket. I would probably need to raise the basket to maintain the air intake underneath. I think I recall it getting a little choked near the...

Spare Ribs on my CB American Gormet w. QVIEW

True that, 1894. I can turn the grate sideways to make it sit higher, but with the baffle I have now the smoke and heat would actually have to go down or straight across to get into the smoke chamber. I'm gonna try changing out that baffle this weekend to improve draft. While I'm at it, I may...

Spare Ribs on my CB American Gormet w. QVIEW

I've already chucked the packaging, but it's near enough the same thing I would guess. I lived in that area for a few years.. Army stationed me in the Finger Lakes and later I was up at Fort Drum. I absolutely love fresh dug up taters - no matter the size. A salty thin skin on fresh tater...hell...

CB American Gourmet Temps & Mods

Thanks Guys. I guess I'll start with the baffle change that ya recommended next weekend and do a test run with just that. As small as this smoker is, it does get about 50 deg. hotter by the fire box with the mods I had there. Frankly, I think I also lose a heck of a lot of heat via the top of...

Spare Ribs on my CB American Gormet w. QVIEW

Ha, yea, it looks that way becuase the smoker is small. Actually, those are the little salt potatoes. Dip 'em in butter and salt and eat 'em whole. Yummm

Spare Ribs on my CB American Gormet w. QVIEW

OK, I'm keeping this one simple because it's more about futzing with the smoker than it is about the meat. Enjoy the Q-VIEW! So here's what it was. It started life as a cryovac rack of spares... (folded over on itself to fit in the dish). I rinsed it down, dry it off and oiled it up with a...

CB American Gourmet Temps & Mods

Hey folks, The Char-broil American Gourmet was my first foray into the off-sets, much less a pure smoker of any kind. Before that I was all about grilling on Weber kettles. The CBAG can do a successful smoke, but now I understand only too well about its limitations. Here is a pic of my little...

    Smoke ring throughout the meat?

I get the pink meat as well and I am running in the 190 - 200 range lately. In my case it's not intentional, I have to correct a poor draft problem. Makes me think of the meat we used to cook in the crock pot. That meat always came out looking pretty red too.

How did you come up with your screen name?

Dan is my name. I'm a mutt by family lineage, but my father was fairly vocal about his Scottish lineage. Since the area I live in is known as the Hudson Highlands, I thought Dan of the Highlands was an appropriate fit. The parents from the movie "So I Married An Axe Murderer" are my parents...
