    chicken question

    I'm doing ribs (2-2-1 method) and chicken quarters today. I need a rough estimate on how long the quarters will take, so they are done about the same time. I know I need to smoke to temp and not put the chicken above the ribs, just need a rough estimate. Thanks!

    I also get wood from Rees's. Though I have not used their mesquite, I really do like their hickory and apple. I can't imagine it not being very good wood. give it a try and let us know how it is.

    I had made them several times and they were extremely mild. I then made them for a get together and hyped them up pretty good. I smoked them the same as I had always done and they were like lava in your mouth! The crowd was not impressed

    Well, unfortunately the weather didn't cooperate. The wind came up and it started raining and lightning, so the salmon was a no go. I could deal with either the wind or the rain, but the combination of the three was a little more than I wanted to deal with. So the salmon just got baked...

    Now that I'm working 4 10 hour days, I've got 3 days to devote to the smoker! HAPPY DAY!! Got up at 6 this morning and got my chargriller fired up! I've got three butts rubbed and fridged overnight with KC Cowtown rub I'm doing for my sister n law's wedding rehearsal dinner next weekend...

    I found a soup can fills up pretty fast when I've got my smoker loaded with meat. I fished a wire through the existing holes and hung a quart pale I bought at target from it. Works Great!!
