    Cooling down a rub

    I just got home from a 16 hr. shift and started to make a rub for some ribs tomorrow, took a sample and it's really to hot for the little one's, anyone got ideas on cooling it down or do i need to trash it and start over.

    Quail

    I finially got a day off and i thought about smoking some Quail for the first time. Should i wrap bacon across them to keep them from drying out, or maybe a butter and herb to brush on. Anyone got any good advise or a secret recipe.
