    thanks for the replies it is a covere deck and i keep a cover over the smoker as well, really it's the freezing or near freezing temps i was worried about in the winter..i may look at removel for those times.

    all of the above!!! and as you get better and try more techniques,some of these ideas you'll keep some you'll improve on yourself....my piece of advice....get a notebook or journal for nothing but smoking, recipes for rubs you try and note what you did or didn't like about them,on your smokes...

    i saw in another thread where it's recommended to remove the mes controller if the unit stays outside, when it's raining or really cold. mine is under a covered deck and i keep a cover over it as well. what is involved in taking this controller off and unhooking it,and does anyone actually do this?

    it'll work fine, years ago when i graduated from a bullet smoker to a chargriller ,the first one didn't have a sfb and i cooked plenty of turkeys and butts in it that way. it'll run a little hotter cause the fire and all is right there but it'll do fine.

    one quick word of caution,the side burner on my gasser has holes around the bottom so if yours is on a deck be sure you have your grill mats down under otherwise as charcoal starts going it can drop through those openings,and maybe blow away from the mat. that said i use this method some times...
