    3-2-1 Spare Method

been doing a lot of reading on the different posts. i have a grasp of the 3-2-1 method for spares and understand this method will vary depending on preference, but is there something you should be looking for in the ribs that will signal the time to foil? in other words, aside from using the...

    Chicken and pancakes

Sorry about the post. One of my buddy's was over the other night and he took it upon himself to mess with me/you I guess. I didn't realize he did it until this morning. Sorry.

    FINISHING SAUCE (for Pulled Pork)

Went with the original finishing sauce for my last butt. It really was tremendous! I smoked the butt the day before and re-heated it the day of in the crock pot with a nice splattering of the sauce. This stuff was so moist and juicy it was phenomenal! Thanks!

    FINISHING SAUCE (for Pulled Pork)

Can't wait to try the finishing sauce for the the first time this weekend. I know this has been touched on in earlier posts in this forum, but just looking for some fresh opinions. I am smoking my butt on Saturday, serving on Monday. I have read that applying the sauce before storing may make...

    Pork Butt Rest Question...

Planning an 8lb'r this weekend to serve on Memorial Day. I want to smoke the butt ahead of time and reheat the day of in a crock pot with some finishing sauce. My question is, does it make much of a difference if I smoke the meat Saturday as opposed to Sunday? I have seen where a lot of smokers...

    Holding a Pork Shoulder Overnight

Appreciate all the feedback. I think for my purposes, smoking the previous day and not eating until about the 6 or 7 the next night, I may go ahead and smoke it, pull it, sauce it, pack it in the fridge and just reheat the next day in the oven. I do like the idea of throwing it in the smoker...

    Holding a Pork Shoulder Overnight

Question.....If I were to smoke a shoulder or butt the day before we plan to eat it, what would be the best way to store it overnight??? Then, the next day when we are ready to eat, at what temp should I warm the pork up to and at what temp should I have the oven at? I have read where a lot of...

    First successful brisket smoke w/qview

Golf, good looking briskett. I smoked my first one yesterday with so-so results. Mine looked the same as yours, but not nearly as juicy. Your smoke ring looked exactly like mine. when did you hit your plateau? I hit mine about 6 hours in (6#'der) and it sat there for about 3 hours before I had...

    Prepping for Sunday Briskett Smoke

So, here we are on Monday and I have had a chance to reflect on my first briskett smoke yesterday. All in all, I would say it was a minor success. My family really seemed to enjoy it. I didn;t think it was quite as juicy as I would have hoped, but that could have been due to a few factors...

    Prepping for Sunday Briskett Smoke

Richtee, I am trying to take your advice from a previous post, "smoke it, don't choke it". I am about 2.5 hours in, just added some more fuel and we're at about 132*. I'm liking the progress so far. I think it's these chunks that have me messed up. I am more accustomed to the chips. But we'll...
