First off welcome to SMF. Check out Jeffs 5-Day E-course. It is a plethera of knowledge. (Not really sure what a plethera is!!! ) As far as rubs go you can search for turkey or foul rubs and get some good responses. or after brineing I like to just brush on EVOO w/ rosemary, thyme, sage...
I have done this and it is amazing. I have used Jalapenos, pablanos, anahiems, and roasted green chilli peppers. All have turned out fabulous...
For a different mix use ginger, thyme and fresh minced garlic. Be generous w/ the garlic.. You will be amazed...

Looks great!!! I did a brisket last night myself... I used clydes brisket marinade. Usually not much on marinading my brisket but since I've tried this stuff I love it marinade then use it to mop every 1.5-2hrs.
That is some good lookin meat you got there...
I love the pablano pepper... It has an amazing taste with alittle temp.
ABT's with pablanos and anahiems are a nice change from the norm.

Thats a good lookin smoker. I feel that if you build your smoker you have a bigger appreciation of the food you cook in it.. I forsee many great smokes to come....
