Well, after having a successful try at making Canadian bacon & eating some for breakfast this morning I decided to make some of Pop's sausage. I have never made any of his sausage before but I came across the recipe for his breakfast sausage & figured I'd give it a try.

I had a piece of pork butt so I decided to use it. I deboned it & cut it into chunks then threw it in the freezer for awhile. I got it out of the freezer & ground it up - that's when I realized you folks might enjoy some pics. Therefore.......................

Here is the butt right after I ground it.

The seasoning all mixed up & ready to go...

& here it is - 3 lbs of sausage ready to eat...

I couldn't wait to try it out so I had to fry up a healthy serving!

Cooking nicely...

And done!

Eating it as I sit here typing this - this stuff is good! I will be eating like a king come breakfast tomorrow. Fresh Canadian bacon, fresh sausage, fresh local eggs, toast from Roller's bread recipe & maybe some tater cakes from Big Casino's recipe - they are really good too!

I'm glad I tried this out! Thanks for posting the recipe Pops! Now I need some beer

Yes siree

Looks good. I like the patty sausage at times, easier to just thro on the grill and go.

You're quite welcome! I had never made bread before & half expected to fail at my first attempt. I followed your recipe to the letter & it turned out perfect! I have made it every week since then & it has turned out great each time

I've used it for toast, sandwiches, & eating with just butter. I am going to make a sausage sandwich with it & the sausage I just made from the recipe Pops posted. I know it will be good as well!

Thank you so much for trying it!  And, feel free to adjust it to your taste, too.  A little to strong?  Cut ½ oz/lb to ¼ oz/lb or half way in between.  Change the amounts of sage or salt or pepper, it's yours to experiment with and tweak it as you like!  Add other stuff! That is what this is all about; making it your's and making it great!  My dad sold that recipe in his store for 40+ years to millions of people nationwide.  People would move away and write for him to send them some; he'd freeze it and ship it out to them, they'd invite their friends for breakfast at home or camp, next thing you know 20 more letters!

I can't afford to make a business out of it, I'd much rather spread the word to others on here and show them how simple and easy it is to make your own!  And feel free to modify it, it's not patented or anything. The best things in the world are those you share freely and make others happy!
