I have so many sausage kits i need to use up.
If you have not tried any of the kits you should. Lots of great kits out there.
This kit is from Con Yeager Spice located in Zelienople, PA. http://www.conyeagerspice.com/
You can find CY kits at Gander Mountain locations or online. I buy my kits from a butcher friend back up in PA.
Anyways
The contents of this kit.
I'm using regular cure#1 instead of the CY cure packet. Mix the cure with the distilled water, stir to dissolve.
Next add 5.5 T of the Kolbassi mix to the cure water.
5 lbs of 80/20 GB ready to be mixed.
Going to use my wifes KA to mix....YIKES
Use the hook. The paddle just makes the meat ball up in the middle.
Kolbasi mix is all in.
All mixed. Gotta bowl and cover, fridge and go see what else the doc wants to tell me. BBL
Oh yeah. Not using the collagen casings that comes with the kit.
Using natural hog casings.
