Smoked a ST Roast saturday night for some Sammie's next week.

I pulled at an IT of 140º, i wanted 135º but it still turned out good.

I let it rest in the fridge overnight before slicing.

I smoked with RO Lump and Cherry.

Rubbed with Season Salt and CBP.

For some reason my pics of the rub and the roast on the smoker didn't turn out well But these

are the pics i have.

Looks like you nailed another one...JJ

Looks like great sandwich meat!

I guess they are pretty proud of their meat at $5.19 per LB in Florida. But not much waste on that cut.

Good luck and good smoking.

Thanks guys and gals

I haven't brined  one yet, but Ivie (smoking Vegas)  did a tri-tip that looked darn good.

May have to try it next time.

NICE!!  I just recently purchased a nice commerical slicer & been thinking one of the things I need to do is a roast beef. Hope mine comes out half as good as your looks!!
