Since I had to make elk jerky for the grandkids, I figured why not have a go at some pepperoni sticks for them. 

No pics of the grinding and mixing but here's the rest. I used the Hi Country Pepperoni Snack Stick seasoning and mixed in the ECA just prior to stuffing 21mm casings (because the smaller stuffing tube is on back ordered until mid April). This is only 3 lbs smoked today and I have 3 lbs to smoke tomorrow. This is only the second time I've made them and the first 2 lb batch didn't last long at all with hubby!

Started smoking them at 120-125* with no smoke for 2 hrs, bumped to 140-145* and added hickory and cherry for 3 hrs, then bumped to 160-165* for 3 hrs to IT of 155*.

I'm so proud of myself and I owe it all to the great people here at SMF and everything I have learned from them!!!! Thank you all so much!!

Thanks Salt. These were Hi Country and we really like the taste of the pepperoni, but I did add a bit extra. I also use their jerky seasoning and tweak it to our taste. I haven't had an undesirable jerky flavor yet, as for the sticks, I've made pepperoni and spicy blend (this had a nice back end heat but not overpowering).
 
Great job Alesia!  I bet the jerky is great too.  So, how do you like the taste of that High Mountain mix?

Wow the sticks look great. I also use High Mountain jerky mix and like it very well. I will have to try the mix you used for your sticks.

Thanks to everyone for the great words of encouragement. I'm trying and with him out of town all week, well this gives me something to do and it's relaxing for me! He found the paper bag of the sticks when he got back in town yesterday and grabbed one first thing! Says they are great and am I going to make more!

MarkK-I didn't use the Hi Mountain seasonings, I use the Hi Country Seasonings and with these I seasoned for 5 lbs of meat and added an extra 2 Tbsp of seasoning. These are easy for me to get at Sportsman's Warehouse.

1st the sticks look great and i wanna be the eating helper.

2nd you got a 1000x better stick mix with the Hi Country vs the HM which is junk.

I have used HC mix before. Its much more superior mix than the HM. Cabelas carries HC online, But i just buy from the source.

Try the mix, You will be glad you did,

NEPAS, thanks for the info on HC! I'm skeptical of a lot of the mixes like that so it's good to know HC makes good stuff.
