how much ECA per lb of meat

Hey Joe, what I have in my notes state 1.5 oz. per 25 lbs. of meat. hope this helps you. also it's added at the end of your grind and before final mix.

On my last batch of sticks, I used the following...

Per B&P ECA:

1.5 ÷ 25 = .06oz of ECA per pound

.06oz = 1.70 grams per pound

I made an 8.75lb batch:

8.75 x .06oz = .52 oz (14.87g)

So I added .5 oz of ECA.

On the conservative side & it still added a nice tang.

9 grams per pound would be fine if you're making sour candies.....

I found it from nepas at 1.80 ounce which is 51 grams per 5 lbs... and divided it by 5 which is 10 and went with 9....http://forum.bradleysmoker.com/index.php?topic=14060.0

Its in the meat so i'll let ya know how it comes out... its just a lb of beef so its no biggie... i've lost bigger batches

I guess this is another good example of "follow manufacturers instructions" .

Two different suppliers who apparently use two different strengths of acid. Use what they recommend and adjust from there.

Yeah that is weird how the different companies list things. When i want a bit more tang than the 5 tsp for 5 lbs of sticks i add an extra 1/2 tsp
 
I wanted more tang anyway.... Doing a test

here's the recipe

Snack sticks

ground chuck

black pepper

kosher salt

paprika

eca

onion powder

TQ

Try to follow these directions

lol nice directions.

That's about the only problem I have with B&P, there lack of information, on their site and on their packages.
 
I just found it on B&P web site. It says to use 1.5 oz per 25 lbs of meat     42.5 grams/25= 1.7g per lb......... Looks like tang might go to bang.......

Butcher & Packer says 1.5 ounce per 25 lbs.
Sausagemaker, Allied-Kenco, LEM, One-Stop Jerky Shop and Southern Indiana Butcher Supply all say 3 ounces per 25 lbs.
Mid-Western Research & Supply says 2-3 ounces per 25 lbs.
The Sausage Source Says 2 ounces per 25 lbs.
