My buddy ECTO will appreciate this one.

This is Myron Mixons recipe for muffin pan chicken.

I'm practicing for my next comp. in Tallahassee next month.

I filled my pan ½ full of chicken broth.

Then I took a muffin pan and drilled 5 holes in the bottom of each muffin cup to allow the chicken broth to enter.

Trimmed each thigh to fit in the cups, rubbed with my basic rub and placed them skin side down and tossed 2 pats of butter on each one.

Placed in the smoker at 250º for 2½ hours.

I then took them out and placed them skin side up on the smoker with sauce for 30 mins.

These came out so tender and juicy i'm gonna use this recipe next month.

We'll see how the judges like it

Well no wonder it's bite through...It's Braised!...I could not figure why mine is never bite through by just smoking it...not enough moisture in a regular NB...JJ
 
Man those look good - we were up in LA today looking for some square pans - you have me convinced -- going round for sure

Almost everyone on the pro circuit uses muffin pans, I've never tried them till now.

    Yep, I usually braise them in butter, but i finally gave this a try.
 


Hmmm?  A stealth braise?

Just like JJ ended up doing his short ribs a few months back?

   I have some square pans, might try those next.

I think the reason they use the round ones is, 1st they all have to be the same size.

2nd you have to get 8 of those in a 8"x8' box!!!!
 
If you let me know when the comp is I'll come eat those mistake muffin chickens

  You know this as well as I do................................It's the TASTE profile that wins. They only take one bite and you need all the flavor

This is all completely new to me we dont have any competition BBQ  down here. I did use muffin pans to do a Thai chicken ..burger??.Cant think what else to call it but used minced chicken & all those Thai flavours that I have posted in different sections here. Do you have to use thigh whole?Do they have to be a particular style?

  You can use boneless if you want, I use pilgrims pride.
