Ok

So there is a guy at my wifes work that wants some hot slim jims....Yeah ok then

Going to do 1 pound first with the ghost pepper blend.

1/4 cup cold water

scant 1/4 tsp cure 1

1/4 tsp ghost pepper blend

2.5 Tbs mix

Mix together good.

That will be interesting Rick. It also solves a problem for me where one of my knucklehead friends keeps hounding me to order some ghost chiles from Butcher Packer. I guess I will have to make him some special snack sticks to teach him a lesson.
 
I was sittin' here, watchin'.  Saw Ghost Pepper Sea Salt, and my brain chimed into the conversation with "Be Afraid...Be VERY Afraid!."

(And I like spice!  We buy our Tabasco in the industrial size bottle at least three times a year!)

i have a friend who wants me to make ghost pepper jerky....im thinking of doing the same thing!

You would think the ghost salt would be really hot, but its not that bad. I guess the sea salt helps with it.

Got the sticks stuffed. Used 17mm collagen.

Hanging @ 130, no smoke for 1.5 hours. Starting smoke @ 140 with hickory in the AMZNPS. One pound so the sticks wont take to long.
