Wife's Birthday Dino Bones and Brisket w/Heavy Q-View!

My "Wonderful Wife" turned 41 yesterday, so I asked her what she wanted for dinner.  She requested "Smoked Brisket", so I very willingly obliged!

First thing yesterday morning, I headed to SAMS Club and picked up a flat.  I had to make a "Pit Stop" at Wally World for a birthday cake.  While waiting for them to write on her cake, I eyed some "Dino Bones" in the meat section.  Dino Bones and Brisket, what a great combination!!!  I decided to add "Dino Bones" to my Wife's Birthday Dinner.

Got home, unpacked & trimmed the brisket, and seasoned the brisket with Grilled Steak Seasoning from my Buddy Steve at DIPSTIX.  It's a great seasoning for Beef and Pork.  Less salt and GREAT flavor!

Filled the hopper with a blend of Cherry and Maple pellets, and filled my AMNPS with 100% Hickory Pellets, for some added smoke.  Into my New Pellet Smoker for about 8 hours. Started on the "Smoke" setting for a couple hours, then to 180° for about 4 hours.  the brisket hit 165° and I foiled it until 190°.

I unpacked the Dino Bones and seasoned (1) rack with DIPSTIX Grilled Steak Seasoning, and the other with Montreal Steak Seasoning.  Into the pellet smoker for a couple hours at 225°.  I pulled them at 140°.

All the meat was wrapped in towels and into a cooler to rest for an hour or so.

I rushed the brisket a little, and it was a little tougher than I wanted.  Next time, I'll smoke at 180° for as long as it takes.

ENJOY......I DID!!

I've never been able to get a smoke ring with my MES

Not that the smoke ring makes the brisket taste any better, but it sure looks cool!

Sorry man 

I already scored this job a couple of weeks ago.  Not sure if the channel changer will happen but I am sure I got the 12 pack.  Cant believe there are no pics of the Bday girl

Hey Jimmy!

I pulled the Dino Bones at 140° and they were DELICIOUS!

My new Pellet Grill works more like a "Pellet Fired Convection Oven", and the Dino Bones got done quickly, compared to smoking them in my MES.

Still trying to figure it out!

That smoke ring looks killer! Good dino bones area rare find in these parts. Lookin good!
Believe it or not, Wally World carries them!

I wanted to Smoke Dino Bones a while back, and could only find them by the case, at a local wholesaler.  Erain found them at Walmart, so that's where I got mine.

The first batch were much meatier than this last batch, but still tasted good.  They cost $2.08/lb. but they're mostly bone.

Well the brisket looks aesome as ususal and the beef ribs look just as good to. Now I wonder why they cut the beef ribs up like they do. Are they tring to cut out the fat on the ribs or what???? To this fat kid fat is flavor.
 
Very nice! I saw the "dino bones" at wally world last weekend and thought about giving them a try. Also expecting my new AMNPS early next week...cant wait! Although I think that my first victim with the AMNPS will be bacon, my spoiled rotten pooch Juneau would howl and roll over all day long for one of those dino bones!
