After reading the recent Rack of Pork threads, I decided I wanted one. I had to get some stuff at Costco and grabbed one of their racks of pork while I was at it. After coming across the thread by teebob2000, I decided that was the route I was going to take. I got some pesto, EVO, Garlic, balsamic vinegar and started my marinate last night. My MES is set to 275. My plan is smoke it with an oak maple combo using my AMNPS and bring it to about 135* at which point it will hit my barbq for about 10 minutes to sear it and bring it to the 145-150* temp target. I will likely lower the smoker temp as the smoke proceeds depending on the rate at which the meat comes up to temp.

These things look amazing, I'm gonna pick one up myself in the morning.  I try to avoid Costco at any cost on the weekends!  Keep the pics coming. 
 
Looks great! In the few short weeks I've been hanging around here I've found so many good looking things I've added to my "Need to smoke" bucket list. This is one of them.
