Graduation Brisket W/ Q-view

A former student of mine recently graduated chiropractic college, and his folks are throwing a graduation party tomorrow afternoon.  He's a good kid, so I volunteered to smoke a brisket for the event.  I found the biggest brisket I've ever smoked -- 17.25 lbs.  Paid the most I've ever paid, too: $2.29/lb.!! 

The last time I smoked a brisket, I separated the flat and point, which led to even more smokey good flavor.  This flat was huge!  I'm using my upright, which required splitting the flat into 2 parts.

Rubbed with Rudy's, pepper, and a bit of brown sugar (heat & sweet).  Got home from work, changed clothes, and got to cooking just before 6 pm.  I'm smoking with a mix of hickory and walnut.  Maintaining a nice steady 233*.

My wife -- silly girl that she is -- asked if I would smoke some salmon for dinner.  I told her if she wanted to eat sometime after 8 pm then I would.  No concept of smoking time!

  We did have some leftover pizza, so I threw it in to smoke up and warm up for dinner.  Turned out great!

After the pizza came out, I put some chicken thighs in (they were 99 cents/lb.).  We'll knosh on those through the weekend and into next week.  Here's everybody in the pool.

I'm going to take it to 165*, foil finish to 190*, rest in a cooler and slice for sandwiches.  Gonna be a long night.  Stay tuned for the finished product and subsequent reviews...

It is going to be a long night but will be worth it. Cant wait to see the finished product.
 
Boy that's a load of meat you got in your smoker!

Can't wait to see how it turns out.

I don't know why it is, but it seems to me the food always tastes better when the smoker is full!

So here's the post-mortem:  the brisket was a hit at the party!  Foiled everything around midnight Friday night and back in it went at 250*; at this point, the brisket had been in the smoker for 6-6.5 hours -- pretty much the usual routine. I set my timer for about 3 hours of sleep, figuring the IT would be around 190* about then (my target as this was supposed to be sliced).  When I awoke and checked, the dang thing spit right past the mark and hit the 205*!!!!  That whole huge brisket was done in around 10 hours!  Here are 2 of the 3 portions -- looking pretty dang great if I do say so myself!!!

Needless to say, there was no way these were going to hold up to slicing.  I wrapped everything in towels and set in a cooler and went back to bed.  Four hours later, those puppies were still hot enough to burn my fingers while I pulled everything for the party.  Here's one of the portions:

After this project, I had to help someone move and I was short on time.  I hadn't had any breakfast, so I stuffed a bunch of brisket into a folded piece of bread and scarfed it down on my way out the door.

  Turns out brisket is a great breakfast food!  And it hung with me through the move! 

As I said: party-goers raved about the brisket and pretty much inhaled it.

I don't know why it is, but it seems to me the food always tastes better when the smoker is full!  So true!  Makes momma happy to have lots of food ready to go during the coming week, too!  Gots to keep momma happy!
