The burn ban was lifted earlier this week so I fired up my Oklahoma Joe's offset smoker and had an awesome dinner last night! Battery was dead on the camera so no pre-prep pics, but I do have the end results.

Two whole chickens 225 for 3.5 hours

I decided to do pull chicken and it was falling of the bone juicy! This is only one of the two chickens.

One of the slab of ribs. cooked 225 for 5 hours. I decided not to do the 3-2-1 method, Just sprayed it down with apple juice one every hour.

Here's one with it cut up. It didn't last long, but I have a 2ND slab for today's lunch!

All plated up wit some potato salad, and corn casserole, Dang almost forgot the sauce, but once that is done there's no pics cause I will be eating!

The next two pictures came out blurry. 7.5lbs pork butt that will be devourer today's lunch! Cooked it at 225 for 14 hours. This pic was before I had foiled and placed in the cooler for 4 hours. I had to again explain to the wife it isn't burnt...

   It's called a bark and has tons of flavor!

What is in the corn cassarole?  Looks really good!!
I saw a recipe I wanted to try, but was missing some of the ingredients and decided to just to wing it. This is what I came up with...

1 lb bag frozen corn thawed, 1 large pear peeled/diced up, 1/2 small onion, 1/2 stick of butter, 1/2 cup sour cream, 1/2 cup of mexican blend cheese, and salt and pepper to taste. I cooked it at 350 for 30mins. I then put some Italian seasoned bread crumbs on top and back into the oven until the crumbs are brown and toasty (around 15mins or so).

looks great!! your right the "Bark" is what take the PP over the top.
Every time I brought in something she kept saying it looks burnt, and every time I kept telling her that's just bark/flavor... It's funny for as long as I have been cooking its the same thing... maybe I should tell her it is nasty and burnt and I am willing to save the family and eat it all myself!

I wanted to add a little bell pepper to the mix, but the one I had didn't look so hot. I will add the wife thought the pear was a poato and I said nothing until she gave me the thumbs up!
 
 
are you serious?  a burn ban means you cant use the smoker    thats just not right   i thibnk i would fight that one

Yea, that's a serious burn ban.  Next thing you know they'll give you a ticket for smoking a coffin nail!

But,  the food looks great,  you didn't forget a thing!

I didn't know a burn ban was for smoking either.

We have burn bans here all the time, but I keep on smoking.
 
Yeah, we have had a Governor's ban for a LONG time. It just mean I have to have the smoker on a 10X10 pad which I don't, but hope to have one down in the near future! For the last week we are under county ban which means no open flames! =)
