Thanks Pops, you da man.  This really helps explain, in great detail, the mysteries of those large pieces of meat we see so often in the restaurant supplies and Costco and wonder how to process it.

LMAO.. Bear....Now i can put a name and cut location to that roadkill !!! I love picking up a package of meat and asking myself..what the hell is this??
