First Try at Fresh Sausage

Picked up about 16lbs of boneless pork butt from Costco for a first time go at sausage making.....

The Meat:

Making 3 type of sausage; Italian, both hot and sweet varieties (in casings), and a bulk breakfast sausage.

The Stuffer:

Got a chance to finally use my muzzle-loading "Kirby Cannon" stuffer — Here it is prior to the workout. The nice thing about this stuffer is it is quite easy to control the speed of the meat flow—a very important consideration especially for novices like myself

A good learning experience for both me & my sons. Tasty, too!

Everything looks great Kevin.  I'm going to have to break down and build me one of those stuffer one of these days. My boys keep wanting me to make some home made Brats but they don't want to help pay for the meat or help with the stuffing. Oh well-all the more for MEEE!!

Thanks, Joe. The three of them enjoyed the whole process—we all had a good laugh together throughout the whole ordeal...er...experience.

Good news is—whether they're scarred or not—they've put in a new request for BOCKWURST! Gotta go find some veal.....

Re: background set— Here's the 'secret' art direction tip: move all the appliances (coffee maker, kitchenaid mixer, etc) to the far end of the counter because the cabela grinder is HUGE!!

One of the things I DID do before starting was buy a large HDPE cutting surface.

I used a 1/2" thick sheet, cut approx 2' x 4' to place over the 'uneven' tile counter. You can see it better in the photo of the stuffer.

Gives a broad, even surface to work on; moveable (indoors & out); easy to keep clean & butcher on it with plenty of elbow room. A good investment if you're short of room, or like me, want a smooth, even surface upon which to cut, grind, mix & stuff.

Great looking sausage! Did you build the water stuffer?
Some assembly required. Keeps the cost down. Most of the heavy lifting (& manufacturing) done by the designer.

Thing is a kick to use. I havent tested it to see how fast it'll stuff out of fear....
